- 4 cups chopped rhubarb
 - 2 cups sugar
 - 2 cups chopped celery
 - 1 cup chopped onion
 - 1/2 cup chopped green pepper
 - 1/2 cup chopped red pepper
 - 1/2 cup vinegar

 - 1/2 teaspoon ground cinnamon
 - 1/2 teaspoon ground allspice

Instructions:

 - Cook and stir over medium heat until sugar has dissolved.
 - Bring to boil, reduce heat and simmer, uncovered, for about 1 hour or until thickened, stirring occasionally.
 - Remove from heat and let it cool.
 - Transfer to airtight containers and store in the refrigerator.
