  • 1 double pie crust
  • 4 cups fresh rhubarb, chopped
  • 1 1/2 cups granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place one pie crust in a 9-inch pie dish, and trim any excess dough.
  3. In a large bowl, combine the rhubarb, sugar, flour, cinnamon, and salt. Mix well until the rhubarb is evenly coated.
  4. Pour the rhubarb mixture into the prepared pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Place the second pie crust on top of the filling, and crimp the edges to seal.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake the pie in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove the pie from the oven and let it cool before serving.

This Classic Homemade Rhubarb Pie is best enjoyed warm with a scoop of vanilla ice cream. The sweetness of the filling perfectly complements the tanginess of the rhubarb, making every bite a delightful experience. Whether you’re hosting a summer barbecue or just craving a delicious dessert, this pie is sure to be a hit!
