Rhubarb Mint Iced Tea

Ingredients:

  • 1 cup chopped rhubarb
  • 1/4 cup fresh mint leaves
  • 4 cups water
  • 1/2 cup sugar
  • Ice cubes
  • Mint sprigs for garnish

Instructions:

  1. In a saucepan, combine the rhubarb, mint leaves, and water.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
  3. Strain the mixture through a fine sieve, pressing on the solids to extract all the liquid.
  4. Discard the solids and return the liquid to the saucepan.
  5. Add the sugar to the liquid and stir until completely dissolved.
  6. Let the mixture cool to room temperature, then refrigerate until cold.
  7. To serve, fill glasses with ice cubes and pour the chilled tea over the ice.
  8. Garnish with mint sprigs and enjoy!
