Rhubarb Bars Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 cup cold butter, cubed
- 4 cups diced rhubarb
- 1 1/2 cups sugar
- 1/3 cup all-purpose flour
- 4 large eggs, beaten
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large bowl, combine 2 cups of flour, 1 cup of sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared baking dish.
- In another bowl, mix together the rhubarb, 1 1/2 cups of sugar, 1/3 cup of flour, and eggs. Spread this mixture over the crust in the baking dish.
- Crumble the remaining crust mixture over the rhubarb layer.
- Bake in the preheated oven for 45-55 minutes, or until the bars are golden brown.
- Cool completely before cutting into bars and serving. Enjoy!
