Ingredients:

  • 8 vegan sausages
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery sticks, sliced
  • 400g can of chopped tomatoes
  • 400g can of cannellini beans, drained and rinsed
  • 200ml vegetable stock
  • 2 tbsp tomato puree
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large casserole dish, fry the sausages until browned all over. Remove from the dish and set aside.
  3. In the same dish, fry the onion, garlic, carrots, and celery until softened.
  4. Add the chopped tomatoes, cannellini beans, vegetable stock, tomato puree, smoked paprika, thyme, salt, and pepper. Stir well.
  5. Return the sausages to the dish, ensuring they are covered with the sauce.
  6. Cover the dish with a lid or foil and bake in the oven for 30 minutes.
  7. Remove the lid or foil and bake for a further 15 minutes until the sauce has thickened.
  8. Serve the sausage casserole hot with your favorite side dish.
