Rhubarb Cheesecake Bars
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 cups chopped rhubarb
- 1/2 cup sugar
- 2 tablespoons water
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared baking dish.
- In a saucepan, combine rhubarb, 1/2 cup sugar, and water. Cook over medium heat until rhubarb is soft, about 5-7 minutes. Remove from heat and set aside.
- In a mixing bowl, beat cream cheese, 1/2 cup sugar, eggs, and vanilla extract until smooth. Pour over the graham cracker crust.
- Spoon the cooked rhubarb mixture over the cream cheese layer.
- Bake for 30-35 minutes, or until the center is set.
- Let cool before slicing into bars. Enjoy!
