Rhubarb Doughnuts
Rhubarb Poppy Seed Baked Doughnuts
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup Greek yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 cup rhubarb, finely chopped
- 1 teaspoon poppy seeds
Instructions:
- Preheat the oven to 350°F (180°C) and grease a doughnut pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the melted butter, Greek yogurt, egg, vanilla extract, and lemon zest.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the chopped rhubarb and poppy seeds.
- Spoon the batter into the prepared doughnut pan, filling each mold about 3/4 full.
- Bake for 12-15 minutes or until a toothpick inserted into a doughnut comes out clean.
