Rhubarb Egg Muffins
Healthy Rhubarb Muffins
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup canola oil
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/4 cups rhubarb, chopped
Instructions:
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a bowl, mix together the whole wheat flour, all-purpose flour, sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the applesauce, canola oil, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the chopped rhubarb.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool before serving.
