Rhubarb Muffins with Streusel Topping
Healthy Rhubarb Muffins
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup canola oil
- 1/4 cup unsweetened applesauce
- 1/3 cup plain Greek yogurt
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cups chopped rhubarb
Instructions:
- Preheat the oven to 375°F and line a muffin tin with paper liners.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
- In a separate large bowl, mix the brown sugar, canola oil, applesauce, Greek yogurt, egg, and vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the chopped rhubarb.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
