Rhubarb Slush
Ingredients:
- 4 cups chopped rhubarb
- 2 cups water
- 1 cup sugar
- 1 can lemon-lime soda
- Ice cubes
Instructions:
- In a large pot, combine the chopped rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for about 20 minutes, until the rhubarb is soft.
- Remove the pot from heat and let the mixture cool. Once cooled, strain the rhubarb mixture through a fine mesh sieve, pressing the solids to extract as much liquid as possible.
- Pour the rhubarb liquid into a shallow container and place it in the freezer. Allow it to freeze for at least 4 hours, or until firm.
