Sweet Rhubarb Snack Bars
Ingredients:
- 2 cups chopped rhubarb
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
Instructions:
1. Preheat the oven to 350°F and grease a baking dish.
2. In a bowl, mix together the rhubarb, oats, almond flour, maple syrup, coconut oil, vanilla extract, cinnamon, and salt.
3. Press the mixture into the prepared baking dish and bake for 25-30 minutes, or until golden brown.
4. Allow the bars to cool before cutting into squares and serving.
