Strawberry Rhubarb Tiramisu Recipe

Strawberry Rhubarb Tiramisu

Ingredients:

  • 1 cup chopped rhubarb
  • 1 cup sliced strawberries
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 cup strong brewed coffee, cooled
  • 2 tbsp coffee liqueur
  • 24 ladyfingers
  • Cocoa powder for dusting

Instructions:

  1. In a saucepan, combine the rhubarb, strawberries, sugar, lemon juice, and vanilla. Cook over medium heat until the fruit is soft and the mixture thickens. Remove from heat and let it cool.
  2. In a mixing bowl, beat the heavy cream until soft peaks form. In another bowl, mix the mascarpone cheese and powdered sugar until smooth. Gently fold the whipped cream into the mascarpone mixture.
  3. In a shallow dish, combine the cooled coffee and coffee liqueur. Dip each ladyfinger into the coffee mixture, making sure not to soak them too much.
  4. In a serving dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the fruit compote.
  5. Repeat the layers with the remaining ingredients. Cover the dish and refrigerate for at least 4 hours, or overnight.
  6. Before serving, dust the top with cocoa powder. Enjoy this delightful twist on the classic tiramisu!
