Ingredients:

  • 1 pound rhubarb, trimmed and chopped
  • 1 cup sugar
  • 1 cup water
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers
  • 1/2 cup brewed coffee, cooled

Instructions:

  1. In a saucepan, combine the rhubarb, sugar, and water. Cook over medium heat until the rhubarb is soft and the mixture thickens, about 15 minutes. Allow to cool.
  2. In a mixing bowl, beat the mascarpone cheese, heavy cream, confectioners’ sugar, and vanilla extract until smooth and creamy.
  3. Dip each ladyfinger into the brewed coffee and place a layer of soaked ladyfingers in the bottom of a serving dish.
  4. Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of the cooked rhubarb.
  5. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone mixture on top. Refrigerate for at least 2 hours before serving.
  6. Sprinkle with additional confectioners’ sugar before serving, if desired.
