Gluten-Free Vegan Raspberry Rhubarb Glazed Donuts

Ingredients:

  • 1 cup gluten-free flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup coconut oil, melted
  • 1/2 cup almond milk
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 tsp vanilla extract
  • 1/2 cup rhubarb, diced
  • 1/2 cup raspberries, mashed
  • 1 cup powdered sugar
  • 2-3 tbsp almond milk

Instructions:

  1. Preheat the oven to 350°F and grease a donut pan.
  2. In a large bowl, combine the gluten-free flour, almond flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the melted coconut oil, almond milk, flax egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the diced rhubarb and mashed raspberries.
  6. Spoon the batter into the prepared donut pan and bake for 15-18 minutes, or until a toothpick inserted comes out clean.
