Vegan Rhubarb Donuts
Gluten-Free Vegan Raspberry Rhubarb Glazed Donuts
Ingredients:
- 1 cup gluten-free flour
- 1/2 cup almond flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup coconut oil, melted
- 1/2 cup almond milk
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
- 1 tsp vanilla extract
- 1/2 cup rhubarb, diced
- 1/2 cup raspberries, mashed
- 1 cup powdered sugar
- 2-3 tbsp almond milk
Instructions:
- Preheat the oven to 350°F and grease a donut pan.
- In a large bowl, combine the gluten-free flour, almond flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the melted coconut oil, almond milk, flax egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the diced rhubarb and mashed raspberries.
- Spoon the batter into the prepared donut pan and bake for 15-18 minutes, or until a toothpick inserted comes out clean.
- Allow the donuts to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- While the donuts are cooling, whisk together powdered sugar and almond milk to make the glaze.
- Dip each donut into the glaze and let set before serving.
